that green colour thing is usually what they use after chopping up in kolo mee (if some bother to use vege) and the red colour thing is what they put in the little dish, also after chopping up. or, something to rub on someone's hands and make them smell it.

Sour Milk:
Yes... they are also known as sawi/菜心 and chilli respectively. I think it'll be more interesting to rub on someone's eyes. Or privates :P

Yeah, it's very homogeneous. Happens every now and then.
